Function This enzyme catalyzes the reversible epimerization of cellobiose to 4-O-beta-D-glucopyranosyl-D-mannose (Glc-Man). It can also epimerizes cellotriose to Glc-Glc-Man, cellotetraose to Glc-Glc-Glc-Man, and lactose to epilactose.
